I have been experimenting with adding in more plant based foods into my rotation and this is my absolute favorite new happy accident concoction! I had a leftover block of silken tofu from a new vegan recipe I recently tried and a TON of fresh basil, so I decided to try making a sauce with the two. Something I could easily toss over pasta but also something that would go well on a pizza too because what is life without pizza?
My favorite way to use this as a pizza sauce is to first grab your favorite “naked” pizza crust (mine is Cappello’s grain free pizza crust). Drizzle your crust with garlic infused olive oil, your favorite Italian seasonings, a little crushed red pepper and (vegan, or not) mozzarella cheese. Bake according to package directions, then top with Vegan Alfredo Sauce and some additional fresh basil. It’s quick, easy, and absolutely delicious! Feel free to pack more veggies on top like spinach, kale, or broccoli, or top with a little crushed red pepper and parmesan, my favorite!
1 package silken tofu
1 tbsp garlic infused olive oil
1 cup fresh basil
1 tsp lemon juice
salt + pepper to taste
Pulse all ingredients in a food processor or blender until smooth. Add more seasonings to taste if desired.
Use as a pizza or pasta sauce or to dress veggies + grain bowls!
