They are low FODMAP friendly, Keto friendly, refined sugar free, can be paleo friendly if you swap peanut butter for almond butter, and require only ONE bowl and 15 minutes of your time from start to finish.


Hey, hi, hello. YOU ARE WELCOME! These 3 ingredient flourless peanut butter cookies are my favorite low FODMAP keto friendly dessert. I don't often make too many keto friendly recipes, but after all the baking I have been doing lately, I'm trying to clean things up a bit, especially will the holidays coming at us full steam ahead!


Pre-food blogging, I really did not eat too many desserts, regardless of whether or not they were low FODMAP friendly desserts. I was focused much more on nutritional value and using food as fuel, but since going full time as a food blogger, food is so much more than fuel, it's work, it's fun, it's love, it's literally life! I'm totally not complaining, but I am learning a lot about balance, especially when it comes to low FODMAP desserts. There is absolutely a place for dessert on a low FODMAP diet, it's just that choosing the right ingredients are key here. Let me be clear, I am so not against carbs, but I do know I eat more than I need, especially when adding low FODMAP desserts into the mix more frequently, so creating some keto friendly desserts is welcome when my sweet tooth kicks in. Ingredients


1 cup peanut butter (or nut butter of choice)


1 cup coconut sugar OR monkfruit


1 large egg


optional: JoJo's "Guilt Free" Chocolate Bars for garnish

  1. Pre-heat oven to 375F and line 2 baking sheets with parchment paper

  2. In a large mixing bowl, whisk together egg + coconut sugar or granulated monkfruit sweetener.

  3. Once mixture is fully combined, add in nut butter whisking with a fork vigorously until mixture is smooth and all ingredients are fully incorporated.

  4. Using a cookie scoop, scoop out dough and roll into round balls.

  5. Arrange cookies on parchment lined baking sheets, about 6 cookies per sheet.

  6. Using the back of a fork, press down gently on the cookies to create a criss cross pattern. You may need to lightly grease the fork with olive oil or cooking spray to avoid sticking.

  7. If using, chop your JoJo's Chocolate Bars into pieces and gently press down on top of the cookies prior to baking.

  8. Bake at 375 for 10-12 minutes or until cookies are golden brown and beginning to firm.
